You can get a sign with colored text using give, or place one directly with setblock. Since 1.20, signs have two sides and can be waxed to prevent editing; since 1.17, they support glowing text. The generator outputs the format for the selected version.

Can text on a sign run a command when clicked?
Yes. Add a click event (run_command) to the text, and the command runs when a player right-clicks the sign. You can set this in the generator's text editor.
How do I get a hanging sign?
Hanging signs were added in 1.20. Select “Hanging Sign” under Style.
